mckayleesmom wrote: Im making our grocery list and I told dh that I was going to try to find new recipes and ideas.....and Im not finding many I like...Anyone have any suggestions?

luvmykids replied: Did you see the ones I posted in your grocery shopping thread? If you didn't like any of those here's another one:

Monterrey Chicken

Bake chicken breasts (I actually use thighs, cheaper and more tender) as you normally would with BBQ sauce at 350 degrees, while they're baking cook some bacon and slice a tomato, when the chicken is done, turn the oven off and top each piece with a slice of tomato, bacon, and shredded cheese, heat until the cheese melts.

mckayleesmom replied:
mm...that does sound good..Thanks

AlexsPajamaMama replied: Last night I made bow tie pasta, sauce and sweet italian sausage....put it all together in a casserole dish, topped it with cheese and baked it in the oven until the cheese was melted...yummmo
Also had garlic bread with it too
Its more of a cool weather meal, but you could make it and just dont bake it....I made it ahead of time and warmed it up in the oven

CantWait replied: Meatloaf is super easy and super yummy.

Ground Beef
Your favourite seasonings ( LOVE dill)
Bread crumbs
milk

Mix together, make one big lump. Stick in 350 degree oven until middle is brown. Pour jar of tomatoe sauce over for another 10 minutes, or slice and top with gravy.

Serve with potatoes, and your choice of vegetable.

One of our favourites.

luvmykids replied:
We love meatloaf, I use an egg too to keep it super moist. And while I'm at it, I do double recipe and use half for meatloaf, half for meatballs and then you have 2 nights done at once plus usually leftover meatloaf for sandwiches! thumb.gif

CantWait replied:
Never thought of meatloaf sandwiches, ummm thanks for the idea, going to have to do that next time. With some green peppers and mushrooms.

I don't eat a lot of ground beef, but Oh my mouth is watering just thinking of it.

luvmykids replied:
Me too, now I know what we're having for dinner! laugh.gif

A&A'smommy replied: turkey burgers

ground turkey (they taste REALLY good on a little grill)
Worcester sauce
salt and pepper
and some other spices that you like

make patties and I like to serve it with corn its really yummy and healthy

chicken tacos cooked the same as regular tacos or turkey tacos its gives the old stuff a little twist and its healthier and tastes better to me.

cream cheese enchiladas (this is super easy and quick)

1 package of chicken breast
1 package of cream cheese (I use reduced fat)
1 package of tortilla shells
1/2 a pack of taco seasoning
and 1 can of enchilada sauce or you can use salsa

preheat oven to 350
cut up chicken into small pieces and sauté with a tiny bit of butter on the stove top when they are done add cream cheese and 1/5 a pack of seasoning when cheese is completely melted and and mixed into chicken put them on tortilla shells and roll them up. put in oven cook until shells or brown and crispy add enchilada sauce and heat that up then they should be ready... also 1 package of chicken should make 5 enchiladas.

when I double it up I still only use 1/5 a pack of taco seasoning and only 1.5 packs of cream cheese.

mckayleesmom replied:

Chicken Wellington

You can vary this dish and it's ingredients to suite your tastes. There is really no measuring involved..just use as much or as little of each ingredient as you like.

Sautee thin slices of chicken(you can cut the chicken in slivers or small cubes) with onions and mushrooms in pan with light olive oil.

Mix cream cheese and dijon mustard together( I usually use 2 square packs of cream cheese and lots of dijon..but again..use as little or as much as you like..until it passes your taste test..I like mine a little spicy)

Spread out puffed pastry pieces and spread each pastry with the dijon/cheese mix and then add chicken mix and roll to create an individual size little pastry. Place on pan. Repeat until you have used all of your chicken ingredients. You will have left over dijon mix to use to dip pastry in at the table.

bake on cookie sheet at 350 until pastry is golden brown.

This can be prepared in about 20 minutes.

I usually make a salad with it and a veggie of some sort.

I LOVE the Kraft magazine.

I would highly recommend signing up for it, I've made several things from it & they are all soooooooooooooo good. biggrin.gif

Hillbilly Housewife replied: Jambalaya - simplified

Cook rice - I usually make 3 cups dry (makes 6 cups cooked, I get leftovers)

Cook some italian sausages in a pan... once cooked - slice thinly or cut into bite-sized chunks

Cook some mushrooms, celery, onion, or whatever veggie you want, cut small

Cook some shrimp in some butter with garlic (optional)

add some soya sauce to the rice - mix all the stuff up and voila

I add some tabasco sauce, garlic powder, chili powder because I like it a little spicy... but only to my bowl because the kids don't eat it too spicy.

***

Potato balls
the kids enjoy doing this with me... lol

we make mashed potatoes... we make the consistency to kinda pasty as opposed to soft... we have fun crushing corn flakes - mix the crushed cornflakes with some garlic powder and italian seasonings... then we wash our hands and make balls wth the potatoes, roll them in raw egg, then in the cornflakes...then we bake them.

Yum!

***

Quiche (pronounced Keesh)

have a pie crust ready (you don't "really" need it though)

mix about 6 eggs together, with some chopped veggies - have the kdis pick the veggies...i put chopped spinach, mushrooms, onions and sometimes greated carrots. Sprinkle some cheese on top - bake until egg is cooked - slice like a pie... good as a breakfast food too. I usually serve it with mashed potatoes and a salad if we eat it at dinner.

***

Green string beans - put in a saucepan - add some sugar (about 2 tablespoons) and add some soya sauce, stirring the grean beans, until they're wll coated... add some sliced garlic, about 2 cloves...adjust the sugar amount to your taste - but this makes like a chinese-style sauce. Very yummy!

toady_buckshot_noodle replied: CHICKEN NOODLE CASSEROLE
