GINGER PEAR MUFFINS 3 c Whole Wheat Pastry Flour 2 t Baking Powder 1 t Baking Soda 1/4 t Allspice 1/4 t Cinnamon 1/2 t Sea Salt 1/2 c Ripe Pear, Chopped 10 Candied Ginger, Cut Up With Scissors, or chopped 1/2 c Safflower Oil (or other vegetable oil, I don?t use canola) 1 c Maple Syrup 1 T Vanilla 1 Banana,Puréed with a bit of water to make 1/2 Cup
[Note: Preheat oven to 400°] In a large mixing bowl, add flour, baking powder, baking soda, sea salt, allspice, cinnamon, pear, and ginger and mix well. In a blender, blend together oil, maple syrup, vanilla, and banana purée. Pour the wet into the dry, and with a rubber spatula, mix just enough to get all the flour wet. Do not overmix. Pour into muffin tins, with out paper muffin cups (this makes them soggy), and bake for 20 minutes at 400°. Remove muffins from pan after mostly cooled. Variations: You can make any kind of fruit muffins by replacing the pear and ginger with other fruits and nuts (always add to the dry mix and use about 1/2 cup of each). If using nuts, toast them first before adding to dry mix. Leave the banana purée in the recipe. Also, you can replace the spices with anything you like.
