I need serious cake recipe help

Kaitlin'smom replied: My mom has a simple icing recipie and its really good, I can call her later and ask her for it if you dont have one by then, and I think it only has like 2 or 3 things in it, so it might be good for her with the allergies.

PrairieMom replied: this is me being the ultimate in laziness. its for cupcakes, but you can just make a cake out of it. I tired it, and it was good.

This isn't the one I wanted, the one I was thinking was one my grandma always used but I can't find it dry.gif This one is similar, my grandma always called it Wedding Cake, it was a basic cake and she'd add vanilla or almond or orange extract, etc depending on what she wanted it to taste like.

eta: This one calls for shortening but my other one called for butter, you could substitute butter instead of the shortening and it should still turn out fine.

if you google wacky cake there are a few different ways to make it.

The icing did not turn out great. happy.gif sad.gif It was gritty, for some odd reason and was way too sweet, not strawberry tasting like you'd think. Not sure what I did wrong. Back to the drawing board on that one.

At least I have a cake now for her birthday. thumb.gif

Kaitlin'smom replied: my mom said her icing is just a stick of butter (or what you can use) powered sugar and some type of liquid, the liquid is what gives it the flavor, for example you can use coffee (well not for kids), buttermilk, or some type of fruit juice. you just have to blend it till the right consistancy. or you can blend cream cheese, cool whip and powered sugar together, its really good.

Confectioner's powdered sugar.

The only thing I can think of is my 12+ old mixer crapped out on me right in the middle of the process and I had to wait about 5/10 minutes for my mom to bring me hers. dunno.gif
