I need something new to cook

Potato Soup

Spaghetti

Sloppy Joe's
Steak (w/ sides such as mac & cheese, homemade mashed potatoes, etc..)
Hamburger, Chicken Helper
Baked Chicken

I really think that is the jist of it. I can cook boxed meals and stuff that come with all the ingredients and I can read the directions. But I wish there was something else I could make from scratch that is really good. I feel like we eat the same thing all the time. I mean I'm sure there are a couple more things I cook but they aren't big dishes or anthing. Of course I make side items, corn on the cob, rice, corn, peas, green beans, things of that nature.

What are some good recipes that do not take too long?

Mom2BNTN replied: One of my husbands favorite dish is Italian Chicken. Here is my version:

I use either chicken tenders or chicken breasts (whichever I happen to have on hand).

I take a big skillet and line it with aluminum foil (just for easy clean-up) and put my thawed chicken into the skillet along with a bottle of Italian dressing. Cover and cook until chicken is done turning occasionally. I sometime sprinkle a little seasoning salt on the chicken as well just for a little more flavor since my husband loves seasoning salt! It really doesn't take that long to cook this way and we prefer this method over baking.

Hope you will enjoy this recipe as much as we do!!! biggrin.gif It has become almost a weekly meal for us and any side dishes are good with it.

Jamison'smama replied: I cover hamburger patties with cheese and those yummy french fried onion rings and serve with salad.

I stir fry chicken, carrots, green beans (and whatever else I have on hand) in soy sauce and serve over rice.

I make Karens easy cheesey crock pot chicken (DH LOVES it)

Quesadillas with fat free refried beans and cheese or grilled chicken and tomato.

Meatloaf--I have a recipe without any chunks of onion and other stuff kids won't eat--it's actually really good and I don't like meatloaf.

1lb hamburger
1 medium onion, chopped (about 1/2c)
3/4 c uncooked rice
1c water
1 medium zucchini (I use 2), cut into 1/4 inch slices
1 large tomatoe, chopped
1 can Progresso (or 1 box Campbells premium) tomato basil soup
(The kind you don't add water to)
2 c shredded mozarella cheese

Cook ground beef and onion in skillet and drain. Sprinkle with salt and pepper.

Place rice and water in baking dish, stir to mix. Layer cooked beef, zucchini slices and tomato over rice. Pour soup over top. Cover dish with foil.

Bake at 375 for 40 minutes, uncover, add cheese. Bake uncovered another 10-15 minutes until edges are bubbly and cheese is melted.


I also do Pork Chops a lot, I just brown the outside then add some onion, worstechire sauce and water, enough to simmer, cover and let cook.

Another super quick and yummy is polish sausage cut up and cooked with baked beans, we usually have that with a salad and sourdough bread.

And a twist on grilled cheese sandwiches-use sourdough bread, mozerella, and also put tomato slices and sprinkle basil. MMMMMMMM!

My2Beauties replied: Oh yeah I forgot about meatloaf, I do make that too. I knew I was forgetting some stuff. I'd like your recipe without the onion chunks though, sounds yummy!

The Italian Chicken Sounds really good too. I make cheeseburgers all the time too, forgot about that as well. But it's so funny because DH says if it has hamburger in it I can make it, I barely ever cook chicken, roast or anything like that. I can do roast too but it just takes so long in the crockpot. wacko.gif

luvmykids replied: Chicken fajitas are super easy too, cut up chicken breasts and cook ( I marinate in Italian dressing first), add red and green bell peppers, then just warm up tortillas and top with cheese. We also like sour cream and avocado and salsa with them.

daycare mom replied: I'm living for pepper steak in the crock pot right now -some soya sauce, peppers, strips of beef (I use whatever's cheapest), a dash of salt, sugar, and some pepper. Let it cook for hours in the crock pot and serve over rice or egg noodles. Sooooo yummy!

daycare mom replied: I just tried a recipe last night from the Kraft What's Cooking? magazine...Santa Fe Chicken. It was awesome!

1 1/2 cups minute rice (mixed with black beans and yellow pepper)
pour over that one cup of cream of chicken soup and one can water
4 chicken breasts on top
spoon 2 tbsp salsa over each breast

cook on 375 for 35 minutes, then add a cup or 2 of tex mex shredded cheese and bake for 10 more minutes.

Delicious!

Jamison'smama replied: Boston Market Meatloaf/ Kid friendly

1 C tomato sauce (or pizza sauce)
1 1/2 TBS Barbeque sauce
1 1/2 TBS sugar
1 1/2 lb. ground sirloin (I use chuck)
6 TBS flour
3/4 tsp salt
1/2 tsp onion powder
1/4 tsp pepper
dash of garlic powder
(I also add some plain bread crumbs)

Combine tomato (or pizza) sauce with barbeque sauce and sugar in pan over med heat until bubbles--remove--. In large bowl add all but 2 TBS sauce to meat then combine remaining ingredients with the meat. Place in loaf pan, wrap in foil and cook for 30 minutes.

Remove from oven, remove foil, drain the fat, slice while in pan, pour remaining sauce on top (don't spread) return to oven uncovered for 25-30 min. Allow to sit for a few minutes before serving

OK I have to try that with the BBQ sauce, I have never thought of that with meatloaf and it sounds delicious!
