We had my parents over for dinner. Well I made the most SCRUMPTIOUS dinner EVER!!!!! SO good I have to brag about it!
I made a pork tenderloin that was marinated in a cracked peppercorn and portabella mushroom marinade. While that was cooking, I boiled plantains and then mashed them up and used the juice off of the tenderloin to season them instead of milk, then once everything else was close to being ready, I sauteed them in a pan with a little butter. then server slices of the tenderloin on a large bed of plantains. I also served grilled asparagus and also I made a spinach salad with slices of boiled egg and red onions and freshly fried bacon and I made a warm honey mustard and bacon dressing for the salad out of the bacon grease and honey mustard. OMG It was alllllllll soooooo good!! Everyone was raving! I was so excited it turned out good!! Oh and ofr dessert we ahd triple chocolate brownies and vanilla ice cream with sliced strawberries.

Kaitlin'smom replied: Now I am HUNGRY but yes I dont knwo what a plantain is either
kayla's mama replied: OMG thats sounds good. So when are you coming to my house to cook I'm with Brianne....Whats a plantian.
mckayleesmom replied: OH THANK GOODNESS ...some others don't know what it is either...this makes me feel better
Sarah&Mackenzie replied: WOW it sounds good, but I am a picky eater and would probably only eat the tenderloin!! I agree I have no idea what a plantain, is it some sort of potato??
My2Beauties replied: A plaintain looks just like a banana but it's not, they are used in a lot of French type foods I believe, I only know because my sophomore year of college I had a French course and my group had to make a dish that used plaintains and we were the African group, the part of Africa where they speak French (I don't even know what country it was now) but it was used in their type of cooking! Is that french? Or african? It isn't cajun is it, that's like carribean style food right? OK nevermind, I've probably confused everyone, but I know it looks like a friggin banana, but I didn't taste it, so I have no clue what it tastes like! I just made the darn stuff! LOL! Nichole - you can come and cook for me sometime!
Boys r us replied: A plantain is like a cross between a banana and a potato. They look like a banana. They are more like a starch potato when they are green, more sweet and like a banana when they are really ripe. They don't have a lot of flavor and basically take on the flavor of whatever they are served with. I boiled them and mashed them up using butter and drippings from the pork tenderloin..so they had that flavor with them. They are used a lot in cuban recipes.
Kaitlin'smom replied: so we all need a cooking lesson from Nichole
kimberley replied: sounds good. glad it all turned out well
plantains do look like bananas and are usually fried. James is allergic . mostly caribbean people i know use them in a lot of cooking but then so does my filipino side so i am not sure the origin either.
mysweetpeasWil&Wes replied: Sounds great although all of DH's family doesn't eat pork...something to do with their church. Strange I know, so we never have it here. But I like pork tenderloin! And your sauce for it sounded great!
I thought plantains were a Cuban food! My best friend's ex husband is Cuban and made them for us sometimes.
