What food to take

My two thoughts thus far are either a meatloaf or chicken and dumplings but I am open.

ammommy replied: Meatloaf is probably safe, but a couple of other ideas are pot roast or a pot of beef/chicken vegetable soup. They can get a few meals out of these dishes and the whole meal is in one container. That's very nice of you, BTW.

ediep replied: ok, here is what I do...
Boil 1 pound of ziti Drain pasta and put in a 9x11 alum pan. Add one conatiner of ricotta cheese and smoosh it around, add 1 jar of your favorite sauce (I make homemade sauce, but you can use whatever tomato sauce you like) Mix it around. Top with a few handfulls of shredded mozzarella cheese and a few shakes of parmesian cheese. Cover with foil and bake at 350 for about 30 minutes

You guys...what are chicken and dumplings? You guys all talk about it like it's a common meal? When I think of dumplings, I think of pot stickers or some chinese steamed rice filled thingy. Like dim sum! But I have a feeling you guys are talking Bisquick with gravy or something? Am I wrong? Only asking because we talked aobut chicken fried chicken before...and I had no idea exactly what it was.
Funny how we all eat differently.
MyBrownEyedBoy replied: Dumplings- think of noodles, balled up instead of rolled out. Personally, I hate them. I always thought they were slimy. Then again, I was the kid who hated noodles. I didn't even like mac and cheese. I would go with a crockpot soup or stew. Good leftovers. Or the meatloaf.
ediep replied: well, my dad makes his own canned tomatoes with fresh plum tomatoes that he buys by the case in late august. so I just put a little extra virgin olive oil in a sauce pan with some chopped up garlic and onion. Let it cook for a few minutes, don't let it get brown, and then add my dads jars. But, you can use cans from the store, I would by Rienze brand, they are really good. use a big can of crushed tomatoes and a big can of tomato puree. If you like a really thick sauce you could also add a small can of tomato paste. Add salt, pepper, basil, Cook on med for about 30 minutes.

Edie, I made baked Ziti last friday for a co-worker whose FIL passed away..it's so quick and easy and YUMMMY!
