What's for dinner?

Tonight I made a weight watchers recipe. Shrimp and scallops in a lemon dill cream sauce over whole wheat pasta. Followed by cantelope, honeydew, watermelon and papya for dessert.

This was everyone at the dinner tables first time trying papya. It's texture is like avacado and it really didn't have much flavor. Is that how it's supposed to be? it was ok. laugh.gif

luvmykids replied: We're having philly cheesteak sandwiches. What kind of meat do you have, maybe I can give you some ideas?

Boys r us replied: I can't say that I'm big on papaya, it tastes much the same as you described it.

As for dinner, if you're following weight watchers I don't really know what to tell you. But I've got a ton of recipes depending on what you have..most anything can be modified with reduced fat or fat-free items. What about mexican? I think you can make a sin-less mexican meal that is SINFULLY GOOD! Of course 3everything is good when you drown it in salsa!

Uhmmm..let me pull up my recipes and see what I have online that I can copy over here.

Here are a couple that can be made "good" using light ingredients:

Chicken Curry Supreme

Large bag of frozen broccoli florets
2 cans of cream chicken soup
1 can of cream of mushroom
Curry Powder to taste
1 cup of Mayo
5 boneless, skinless chicken Breasts –cubed and boiled
Splash of lemon juice


Cut chicken into cubes and boil until cooked. Steam Broccoli.
While Chicken is cooking, mix soup, curry powder, mayo and lemon juice.
Mix well.

Drain Chicken; place chicken in casserole dish- Layer broccoli on top of chicken, then pour soup/mayo mixture over top. Bake at 350 for 1 hour.
You can layer cheddar cheese on top of soup mix if desired.

Tastes great served over rice.

Chicken Florentine

4 boneless, skinless chicken breasts
1 box of frozen spinach (thawed)
1 container of cream cheese
1 bag of shredded parmesan cheese


Beat chicken breast flat (works well if you place wax paper over chicken). Pat chicken dry with paper towel. Mix together ½ of the spinach, all of the softened cream cheese and ½ bag of parm cheese, salt and pepper to taste. Mix well. Spread a generous amount onto each chicken breast. Roll the chicken breast up (if it is beaten flat, it should be relatively easy to roll up). Wrap each prepared piece of chicken in aluminum foil and place on baking sheet. Bake @ 350 for 45 minutes. Remove from oven. Remove foil. Spread small pat of butter across the top of each piece of chicken(spray butter works well for this) and then sprinkle remaining parm cheese over butter on each piece. Place in oven for another 15-20 minutes. Remove and serve with garlic Mashed Potatoes!


Tip: I buy the thin flat chicken breasts individually frozen at Sam's and that way I don't have to beat the chicken out flat.

Chicken, talapia, salmon, cod, grouper, bay scallops (about 7 lbs), shrimp (about 6 lbs), 5 lbs of lean ground beef in burger sized portions, and 18 1" thick pork chops. rolling_smile.gif Lets not even talk about the frozen fruits and veggies, whole grain waffles, kids pancakes, fish sticks, chicken nuggets and ice cream! My freezer literally groans when I open the door. rolling_smile.gif

So, we're having red beans and cornbread for dinner. yummy.gif It was easy and it is one of Scotty's favorite meals. wink.gif

I buy the regular chicken breasts at sams but then I usually dice some, slice some thinly, leave a few whole, and cut some into strips before I freeze them.

MyBrownEyedBoy replied: I just made hamburger helper. But all I ate was dill pickle potato chips. About 6 of them. I was stressed from work and my stomach was all tied up in knots.

laugh.gif I'm thankful Kylie at least picks out a vegetable or two when she picks dinner. We don't let her do it every night, only when DH really doesn't want to cook or can't figure out what to cook. happy.gif

jcc64 replied: We eat pretty weird food here. Cauliflower, peas, potatoes and tofu in Indian vindaloo sauce. Noah is always asking why can't we eat "normal" food.

mmmmm I love Indian food. Got addicted when I was pregnant with K. I've already told Woody that I'm going to learn how to cook it when the girls are a bit older

jcc64 replied: I actually love any and all ethnic food. We used to eat alot of Indian food when we were poor, young, and first starting out. There's a street in the East Village that has nothing but Indian restaurants and they were dirt cheap. Yet another thing I miss about NYC.....

My2Beauties replied: I ws thinking homemade chicken n dumplings myself, my mom gave me a good recipe the other night, I've never made them before but she said it's goof proof - she hasn't seen me cook yet laugh.gif BUT....DH bowls tonight so there is always take out, um honey can you bring home some bowling alley food, yes a cheeseburger and fries please! blush.gif
