What's for dinner?

coasterqueen wrote: I need ideas for dinners so I thought I'd ask what's for dinner in your house tonight. tongue.gif We are going out for Ryan's birthday tonight. I just need more ideas. It's so hard to come up with things when you work all day and don't have much time to cook at night PLUS all the meals I used to be able to make (crock pot meals) Megan is allergic to.

Ok, so whatcha having for dinner? biggrin.gif

Celestrina replied: What is she allergic to?

coasterqueen replied:
Yellow dye, cotton seed, sesame seed, and chocolate.

The kids and Ryan don't like chicken unless I make "cheesy chicken". It's basically Campbells cheddar cheese soup, cream of chicken soup and chicken. She's allergic to both soups - they have yellow dye (annatto) and cotton seed in them. sad.gif ETA: So we basically haven't had chicken in forever because of this. It's really the only way they'll eat it. dry.gif

amymom replied: We are having stew that I put into the crock pot this morning. Beef, potatoes and carrots.

coasterqueen replied:
yummy.gif yummy.gif yummy.gif Kylie's favorite! She'd eat that daily if she could. laugh.gif She's not much of a meat eater, but she sure loves that one!

My3LilMonkeys replied: We were on the run all night tonight unexpectedly so I cheated and we had Burger King. blush.gif

jakesmommy08 replied: we had "tator tot slop" lol. sounds like megan would be allergic to it tho. Its just browned hamburger, with a can of cream of mushroom soup and a little bit of milk, all mixed together, topped with a layer of chedder cheese, then a layer of tator tots, and another layer of cheese, Sounds gross, taste pretty good and very easy to make!

If anyone wants to try it i can give you better directions! lol

coasterqueen replied:
Ooh that sounds good. We could get around the tater tot issue and cheese with organic white cheese and potatoes, but the cream of mushroom soup is the one I can't seem to find to substitute. dry.gif

Hillbilly Housewife replied: Could you not just make a white cream sauce (i make mine from scratch all the time) and add some mozzarella or other annatto-free cheese along with more chicken flavored stock? I'm sure you can get chicken stock or chicekn flavoring without annatto in it.

coasterqueen replied:
Hmmm, I guess, but I'd have no clue where to start. Can I ask when you have the time? tongue.gif I mean seriously, I get home at 5:30, start cooking dinner, dealing with kids wanting to tell you about their day, two dogs and cats wanting you to pay attention them, dinner is ready, eat, clean up dinner, baths, homework, time for kids to go to bed, then take care of dogs, then sit down for 1/2 hour before it's time to bed and all through that trying to keep the house looking like bugs don't live in it. tongue.gif wacko.gif wacko.gif wacko.gif

bluebear replied: Stew.

Hillbilly Housewife replied:
It doesn't take any more time to make than heating up the can of soup. huh.gif huh.gif

2 tbsp butter/margarine - melt in pot
remove from heat, add 2 tbsp flour, mix with whisk
put back on heat, add milk slowly, keep stirring with whisk.. when all milk is added, bring to boil for a minute, keep stirring, so it thickens up

You can add the grated cheese once you start adding the milk

Takes only a few minutes, and I usually do this as the pasta is cooking.... so that by the time i rinse t pasta, the sauce is ready..sometimes I chop up broccoli and add to that, with half a pound of chopped cooked bacon.. double yum.

Hardly anything I ever cook takes more than 20 minutes.. and I do make most meals from scratch.

coasterqueen replied: Thanks!!! I will definitely have to try it. thumb.gif
